The catfish is baked with the stomach cut, so the meaty parts of the fish is exposed. Its is baked with the skin, but it is not fishy at all. Skin is crispy and its almost flaky! The catfish is topped off with peanuts and roasted garlic (a typical Vietnamese dish). Then, you would take the catfish with skin, along with peanuts and roasted garlic, place them on your personal rice paper. Then choose your condiments (salad, mint leaves, bean sprouts, pineapple, etc) and wrap! Let me just say the sauce that accompanies the dish is really pungent. If you rather not use that, you can use the ngouc mam (fish sauce). While we were at the restaurant, everyone that came into the restaurant had called in before they have arrived. There was about 5 tables that did! This is an simply amazing dish -- a must try for Anh Hong Pho Pasteur! Note: I have also uploaded an image of my own version of the rice paper wrap as an example.
