Seafood Enchiladas Supremas

A large plate with two enchiladas filled with a succulent combination of shrimp, white cod and sauteed vegetables, topped with a rich, creamy jalapeno sauce. Served with rice and black beans. One, the dish looked great and two, it smelled wonderful. I do not always eat black beans but with a good amount of cheese atop, I finished it all. The rice was delicious with bits of corn, herbs and peppers throughout. The creamy sauce smothering the enchiladas made the dish and was very tasty. It has a deep cheese flavor and was aromatic. I scraped the entire plate clean of the sauce. The combination of textures were a delight, the chewiness of the shrimp, the cod melted in my mouth and for once, celery didn't overpower the flavor, I barely tasted it at all. Overall, I loved the dish and would definitely get it again. I washed it all down with Araceli's Lemonade, chosen for the X rated liquer.
