Raspberry Souffle

I have been waiting to try the Souffle at Morton's for a long time, twice I came, and the first time I forgot to order it early in advance, second time they ran out...finally third time is the charm! You have to order it when you order your entree, I guess it takes a long time to prepare! Well, the presentation was really nice...it comes out in a cart where they have to cut it and divide it up for you, the smoke comes out when they cut into it..it's pretty cool! Well, I chose the Raspberry flavor, they also have Lemon, Chocolate and Grand Marnier. I'm not an expert when it comes to souffles, but this was pretty delicious, the puffy pastry on top was sweet and tender, and then the inside of the souffle was very mushy and sweet. I really enjoyed it, but I preferred my other dessert that night over this souffle, which was the carrot cake!
