This is one of the sashimi that I love to use as a benchmark. This piece of Bluefin Toro was sliced correctly and it is VERY fresh. The texture of the Bluefin Toro was indeed great -- no weird after taste or smell (because some sushi places will place them in a freezer). But I rated this a little bit lower than I wanted to since it was very thin. Usually, the sushi chefs are generous with this expensive piece of Bluefin Tor sashimi because people usually don't order it. But, maybe it was just a fluke?
