Ootoro. This is the belly of the fatty tuna. The chef here knows what a great toro is and he really knows. He slices the toro along the grain which almost no chefs do these days. And believe me, there is a difference in taste when you are cutting along or against the grain! The toro is served with just perfect amount of rice. Also, the chef puts just the right amount of wasabi. You really don't want to put too much or too little, it just ruins the taste! This toro is just the best I have ever tasted! The meat just melts in your mouth like butter and it leaves a soothing yet natural sweetness from the toro. This chef knows how to bring out the best of the toro! Also, the rice is prepared perfectly with vinegar, sugar, and salt. The rice alone beats any sushi restaurant. You must try this toro! Oh, and this is market price, so prices will change according to season. Also a little note, we ordered Chuutoro and Ootoro. But the chef didn't serve it back to back since you will get the palates mixed up, he served it in a different order. A chef dedicated to bring the best of each fish for the customer is just unheard of these days!
